A NIGHT AT GAMBRINUS

Some places don't need to reinvent themselves. They just need to keep doing things properly. Over and over.

Whenever Luís and Nadim are in Lisbon, we feel a certain responsibility to show them our version of Portugal. Not necessarily the newest places, or the ones everyone is talking about, but the institutions that have helped shape the city. This time, that meant dinner at Gambrinus.

Opened in 1936, Gambrinus has been part of Lisbon for ninety years. Tucked just off Rossio, on Rua das Portas de Santo Antão, it is one of those increasingly rare places where tradition doesn't feel staged. You notice it in the room (wood, light, carpets) in the rituals and, above all, in the people.

Some members of the team have spent decades working here (in the kitchen, the Chef has been there for 40 years). They know the room, the regulars, the dishes and the rhythm of service almost instinctively.

Everything is precise, but nothing feels overly formal. There is a level of attention you might associate with the very best restaurants in the world, delivered with the ease of somewhere that simply knows what it is doing. 

No theatre. No unnecessary explanation. Just very good hospitality.

We started, naturally, with the famous croquetes. Then came Camarão à Malaguenha, fried squid and, afterwards, steak. The sort of dishes that have been cooked thousands and thousands of times.

To finish, one of the house signatures: Crêpes Suzette, prepared tableside. A small piece of ceremony that somehow never feels ceremonial.

In a world obsessed with what is new, it is a reminder of the value of consistency. Of doing something well, every day, for years. Of having standards without needing to constantly announce them (like some dishes that are not on the menu...).

It is also a very Portuguese kind of luxury.

These are the places we want people visiting us in Portugal to know. They are part of the culture surrounding ISTO. just as much as the factories, the streets, the cafés, the artists and the people we work with.

Gambrinus has been doing it since 1936. One day, we'd like to be able to say the same.
